When Meatless Monday and the last day before Passover coincide, the decision about what to make is easier than ever. Josh and I have a tradition of eating pizza as our last meal before Passover (and our first meal after Passover). In a last ditch effort to eat as much of the chametz in our house as possible, we are currently eating pizza bagels for lunch.
One of the many reasons I love pizza bagels so much is that they satisfy my cravings for pizza while not carrying all of a big greasy pizza from the local pizzeria. Oh yeah, and they are super tasty.
To stop any sauce or cheese from 'escaping' through the hole, Josh likes to add a slice of American cheese to act as a barrier. I, on the other, am happy to risk it.
Piling on pizza cheese is a great next step, but what takes the pizza bagels to the next level is the 'add-ons.' The more I add different flavors of cheese, the better the result. Also, seasonings like oregano help to kick the flavor up a notch.
Finally, enjoying pizza bagels fresh from the oven is really the only way to eat them. While I would love to continue writing this post, I have a hot and delicious pizza bagel waiting for me in the kitchen. I love when on my 'to do' list for Passover prep involves eating :)
