Breakfast For Dinner

Every once and a while, a topsy-turvy day is in order. And really, who doesn't love breakfast for dinner? Especially when you have 25lbs of potatoes in your basement.

I am determined to never let any food in our house go to waste. I hate having to throw out food. It is so wasteful and just feels wrong. On the rare occasion that it happens (generally when I forget that I put veggies away in the wrong drawer because our fridge is packed or we have a lot of last minute, unexpected plans) I can't help but think of the many people around the world, and in our backyard, who do not have enough to eat. I know it is cheesy, but this really bothers me more than I can express. I also don't love the idea of wasting money either.

Although Josh and I are avid bulk shoppers, we are very careful with what we buy. We strictly buy no-perishable items. If we do happen to buy something with a short expiration date we make sure to use it up right away. When Josh makes his weekly Russo's run, he is always armed with a strict list that is made after we have planned out our meals for the week. With a little bit of extra planning we are able to use up our food in the house before it goes bad. Though all of these extra potatoes lying around are making for a quite a challenge.

So in an effort to make sure I use up the potatoes in the basement before they go bad and to make a really tasty and easy meal, Josh whipped up my favorite brunch meal for dinner. An egg sandwich and hash browns. He really knows how to make me happy.

Hand grated potatoes is the only way to go.

And of course paprika (AKA my favorite spice) had to be the secret ingredient.

Although this was Josh's first attempt, the hash browns were top notch.
Just as good as IHOP. Hey, what can I say? They have really good hash browns.
Add some coffee (decaf at night) and this is my idea of the perfect meal.

  1. I am totally with you about not wasting food and I have made homefries for dinner for the exact same reason in the past! Plus, I really like breakfast for dinner!

    Another good tip is to use leftover veggies and meats in soups and stir-fry dishes - a great way to use up ingredients before they go bad!

  2. Always a treat! Growing up, when my father was working late, it was always waffles. These days, my favorite is corned beef hash at night.

  5. You had me at 'breakfast for dinner'! I like to add some sweet corn kernels to my potato fritters and top them with some smoked salmon and a running egg. Gosh, your post really has made me hungry!

  6. I LOVE breakfast for dinner; I almost prefer it to fine dining! I love doing baked home fries. 25 pounds of potatoes! You must be eating them for every meal! LOL!
